We use the ‘Suryatapan’ method to prepare our gulkand (rose-petal jam) under which the composition is left to naturally bake in the sun, which takes about 1 to 2 months to make the jam ready. It has high cooling properties.
Ingredients
- Natural desi-gulab petals (rose petals) [It is mixed with ‘misri’ (rock sugar) and is put in sun.]
- Madh (Honey)
- Variyali (Fennel Seeds)
- Elaichi powder (Cardamom powder)
- Praval pishti (Coral Powder)
[‘Praval’ is found on the seabed in raw form, which is purified and then it is ground in ‘gulab-ras’ (rose-petal juice) for 200 hours, which finally turns it into ‘bhasma’ (powder).]
