The raw urad dal is first crushed manually on Indian grinding stone. The dal with skin on it is then cleaned by hand. Then it is treated with mild edible oil and is left for 2-3 days. It is then crushed with mortar and pestle to separate the skin. Finally, it is manually cleaned and the best quality is separated to pack.
